Crispy bhindi

It is a tasty spicy and crispy bhindi /okra lady finger. It is the best side dish that goes with  any combination. Mainly with dal and rice or you can also enjoy with chapati and parathas. it is popular in North India mostly in Punjab.
Ingredients
200gm bhindi
½ teaspoon turmeric powder
1 teaspoon red chili powder 
1 teaspoon coriander powder 
1 teaspoon cumin powder
 ½ teaspoon garam masala 
1 teaspoon chat masala
4 teaspoon besan (chickpea flour) 
1 teaspoon maida
salt to taste 
oil as required

Method
Wash and rinse the bhindi's and dry completely with kitchen napkin or tissue paper.

If the bhindi  is a big in size, slice in four pieces vertically. If a small in size only two pieces
Take a plate put the bhindi's and sprinkle all spices with besan and maida.
Mix with hand or spoon

The mixture should evenly coat the bhindi's.
Marinate it for 30 to 1 hour.

Take the kadhai and heat the oil for frying.

Add the bindi  in oil and fry till golden brown and Chrisp on a medium flame .
Keep on turning the bhindi's so they get fried evenly  and not get banned.

keep the fry bhindi's on a kitchen napkin or  tissue paper so that the extra oil gets drained off.

Now you can serve directly on Garnish with coriander leaves or few drops of lemon juice.

Enjoy the crispy bhindi with  chapatis , dal and rice ect .

Note
when frying the bhindi's the  oil should be very hot otherwise  it will absorb the oil and become soggy.
