Laccha paratha
it is flate bread .the main ingredients are maida, ghee, salt.
Lachha paratha is the special efforts while rolling the paratha to form layers.its very popular and famous paratha of Rajasthan.
Ingredients
3 cups of flour (maida)
½ teaspoon salt
½ teaspoon sugar (optional)
Water for making dough
Ghee /butter as required
4 tablespoon of semolina (optional)
1 teaspoon oil
¼cup milk
Directions for making paratha
Take a bowl add flour ,sugar, salt , milk, semolina, 1 teaspoon ghee and mix them all together.
Knead a soft dough with water. Apply one teaspoon of oil on the dough so that it doesn't get dry.
Cover and Rest for 10 to 15 minutes . And knead again.
Now divided into equal parts, make big balls of it .
Roll the dough like a big roti by applying little flour on it.
Now make small layers of this roti. As we make the paper fan.
pull all the layers with tight hand. Stretch the dough little longer.
Now hold one side of the doug hand make circular shape, and press again slightly with hand.
Rest the balls for 10 to 15 minutes in fridge.
Now roll the dough with slight hand again and make put on hot pan .
Once the paratha is little cooked flip it and apply ghee on it.
Apply ghee on the both side and cook till the little golden brown, as you see the flakes or layers. Your lachha paratha is ready to serve it hot.
2nd method
Multi-layered patatha
Take the same dough
Roll as usual
It should very thin as u can see in the picture
Apply 2 tsp of ghee
Now cut in strips using knife or pizza cutter
Fold the dough from one side
Collect and fold all the strips. As the picture below
Make a single strip and Apply ghee
Fold in a circular shape
Press with hand , no need of rolling
You'll get many layers in it.as the picture depicts.
Your paratha is ready to go with any curry , sabji.
Note.
Instead of using only the ghee you can make past of rice flour and ghee to apply on dough this will give you more flakeness.
To add more taste to your parathas add egg .
